Food Suggestions:
Serving Chateau Cote de Baleau with Wine and Food Pairings.

Chateau Cote de Baleau is best served at 15.5 degrees Celsius, 60 degrees Fahrenheit. The cool, almost cellar temperature gives the wine more freshness and lift. Chateau Cote de Baleau is best paired with all types of classic meat dishes, veal, pork, beef, lamb, duck, game, roast chicken, roasted, braised and grilled dishes.

Chateau Cote de Baleau is also good when matched with Asian dishes and rich fish courses like tuna, mushrooms and pasta.

Chateau Cote de Baleau is an early drinking, elegant, charm filled, style of Saint Emilon wine that remains one of the better Bordeaux value wines in today’s market place.

When to Drink: 2017–2023     |     Sweetness: Dry

“Made with consulting advice from Michel Rolland’s team, the 2016 Château Cote de Baleau is a plump, sexy, fruit-loaded beauty that gives up tons of ripe black fruits, charred meat, and earthy, herbal aromas and flavors. Textured, upfront, and ready to go, drink it any time over the coming decade or so.

A major sleeper of the vintage and a very strong effort from this property that was sold to the Cuvelier family of nearby Clos Fourtet and their estate in the Medoc, in Moulis – Chateau Poujeaux. This is a blend of 80% Merlot, 15% Cabernet Franc and the rest Cabernet Sauvignon. Cropped at 35 hectoliters per hectare, only 5,000 cases were produced. The Cuveliers have brought much more fruit in the wine, slightly more texture and richness, and this is clearly a successful 2013 and a sleeper of the vintage. Dense purple color, lots of blackcurrants, spice, forest floor and a touch of graphite are all present in this beauty, which is reasonably priced and a noteworthy accomplishment in this troubled year.
